Washoku, "Ichiju-Sansai" Dining Style

Washoku was inscribed on UNESCO's Intangible Cultural Heritage List in 2013. The four main characteristics of washoku are (1) variety and freshness of ingredients, (2) expression of the changing seasons, (3) close ties with annual events and (4) a balanced and healthy diet. The main contributor to the healthiness of washoku is considered to be the "ichiju-sansai" dining style ("one soup, three dishes"). Usually consisting of one soup, one main dish and two side dishes (and a few pickles), with rice as the staple, this way of eating allows people to eat a variety of foods and thus absorb many nutrients and micronutrients. The Japanese Ministry of Health, Labour and Welfare encourages people to eat this way to promote good health.
